I cannot believe it. Our little guy is ONE. No longer a baby and not quite a toddler. Will is active! Always on the move.. not walking just yet, but crawling at top speed and CLIMBING everything and anything. He’s got serious FOMO and he keeps us on our toes.
We spent this last Sunday celebrating Will with our friends and family. Somehow I threw together a “woodland” theme birthday party AND managed to make a tasty grain-free, vegan smash cake WITH naturally dyed sprinkles (no yellow #5, or red 40). Ok – so I bought the sprinkles and the frosting from Whole Foods, but the cake was from scratch.
(I do realize there’s butter in this photo; I used it to grease the pan 🙂) I found my coconut flour and coconut oil for great prices on Amazon. I also found the best buttercream frosting at Whole Foods! Vegan, simple ingredients, only 8 grams of sugar and DELICIOUS.
Most importantly, Will loved it and enjoyed playing with the frosting and picking off each individual sprinkle 😂 AND I felt good about him having it.
Our friends and family are very generous and Will received some really great gifts. I love classic, open-ended toys and I’m grateful that our friends and family have begun to appreciate that too.
